#7 Spain – Mother’s Day Request

Hello all!

For this year’s Mother’s Day I thought – what better way to celebrate than with a country’s meal? In that regard, I asked my mom and she requested Spain, a country in which she worked for a while back in her 20s. It being a mother’s day request, I, obviously, went a bit overboard with the maximum amount of dishes yet – counting 7 as a whole. (I also love spanish food so go figure.)

Figuring it out:

This one was pretty easy again, the most difficult ingredient I had to source was the special paella rice – arroz bomba – which is round like little bombs! Other than that, Spanish cuisine is well-known and well-loved in Austria – with good reason. It’s one of my favorites when it comes to European food. Now, without further ado, let’s get right into it:

This week’s menu: (2025/5/11)

Starter:

Gazpacho: cold tomato & cucumber soup (Recipe)
Gazpacho, especially on hot summer days, is well loved by the Spanish. For me, honestly, it was a bit like a bloody mary – I see the appeal, I’m just not a big fan. One of our diners – my mom’s boyfriend – had three whole plates, though, so there’s definitely palates for it.

Tapas:

Patatas Bravas: (Recipe)
Classic tapa – potatoes with a red pepper sauce.

Tortilla Española: (Recipe)
Eggs, onions, potatoes.

Albondigas: (Recipe)
Really amazing meatballs in a rich tomato sauce! Could be a meal in itself honestly, with some bread on the side.

Pimientos de Padron:
No real recipe here – pop the peppers in hot oil until they get black spots and season generously with salt. I was debating even making these because they seem so simple but it ended up being an absolute favorite!

All served with Baguette on the side.

Main:

Chicken & Shrimp Paella: (Recipe)
Now – I know the original original Paella is made with chicken, rabbit and snails but I believe a strong argument can be made, that the original recipe has received dozens of alterations in different parts of Spain that have all earned their right of passage in the realm of delicious food. Also, my mom likes seafood and it’s her day, so there’s that.

Dessert:

Churros & Chocolate: (Recipe)
A true classic! They were sadly devoured without a picture being taken of them. I realized my nozzle was a bit small so they came out very skinny. They were, however, deliciously crunchy!

This was… a lot of work. Thankfully my wife helped me make the churros because I almost lost my mind, trying to dish out 7 things, 6 of which should ideally be warm, at basically the same time.

I ended up dropping Churro dough all over the floor, screamed in anger, and then proceeded to make the churros AFTER we had had dinner. A wise, less hangry, decision.
