#10 Micronesia (Region) – Down in the Pacific

Hey all! This one was a bit of an adventure. I was looking for the next country to cook from and the randomizer spat out what? – Micronesia! Honestly, this is why I love using randomizers. Every country has a 1 in approx. 200 chance of being picked and it always comes out being a surprise! No offense to Micronesians but I hadn’t thought of them so far.

Figuring it out:

This one was a little bit of a doozy and one where I had to make a call. Now, the randomizer didn’t specify whether it meant the Federated States of Micronesia or the region. So at first I was looking into the FSM specifically, finding some recipes and some information on the 113 thousand people living there. Ultimately though, I decided to broaden my scope to the region of Micronesia, opting to include places such as Guam, Kiribati, the Marshall Islands, Nauru, the Northern Mariana Islands and Palau.

This did make it quite a bit easier to find an assortment of recipes, and especially local sources of recipes, in order to cook a whole meal.

The Recipes:

Appetizer:

Chicken Kelaguen with Titiyas (Guam, Chamorro)
This dish is a chamorro dish, who are people mainly living on Guam. It’s a bit comparable to a chicken ceviche and oh so good. I definitely recommend trying it! For summer it’s a super refreshing option, very lemony.

Main(s):

Grilled Shrimp & Octopus Skewers from the Micronesian Cookbook (FSM)
These skewers are super easy and super tasty. Just cut up your seafood and marinate it in olive oil, garlic, lemon juice, paprika, salt and pepper. Grill it up and you’re done!

Hineksa’ Aga’ga’ Guam Red Rice
This red-colored rice dish with bacon is tasty and quite filling. The color actually doesn’t come from tomatoes at all but from soaked Achiote – an ingredient also found in Mexican food and a natural red food colorant.

Dessert:

Banana Lumpia
These spring rolls are filled with jackfruit and banana. They’re not bad whatsoever but I do recommend adding a caramel sauce and/or drizzle. We didn’t have it with ours because I could not gauge how sweet they will be and they ended up a bit plain.

Micronesia honestly gets a 4,5 / 5 ⭐️!! – the dishes weren’t difficult to make and still, especially the skewers and the kelaguen – oh my the kelaguen – really wowed me.
